A new, much more complete and extensive pastry and bakery formulary is born with the '10,000 Pastry and Bakery Formulas' across more than 1,000 pages. The 10,000 detailed elaborations in this work are divided into more than 30 general categories, among which the following can be found: Ice creams and sorbets, Mousses, Puff Pastries, Crisps, and Sweet Sauces. All of them are broken down into more than 200 subcategories. For example, within Whipped Batters, one can find Sponges, Cakes, Dacquoises, Sponges, and Financiers. In short, an essential manual for any workshop, designed and alphabetically classified to facilitate the search for formulas and their technical application in any pastry or bakery creation.
