1) The volume called Echaurren Tradición (Echaurren Tradition) includes 56 recipes that make up the current offering of this emblematic restaurant. In it, you will find the classic recipes of the Paniego brothers' mother, Marisa Sánchez, and others that her son Francis has incorporated in recent years. Echaurren Tradición is a gastronomic temple, a classic of Spanish and Riojan cuisine, an ode to traditional cooking.
2) The volume called Echaurren Historia (Echaurren History) presents the story of Echaurren in a novelistic style. Indeed, 126 years of existence mean that this foundational inn, which today boasts two Michelin stars, has become a witness to the evolution of cuisine and service. The book is written by Riojan journalist Pablo García Mancha and illustrated by Luis Paniego Araiz.
3) The volume called El Portal de Echaurren (The Portal of Echaurren) compiles the 44 most recent creations of the more personal and contemporary cuisine that Francis Paniego offers in this restaurant. El Portal was the first restaurant in the history of Riojan cuisine to achieve its first and second Michelin stars.
