Its gamble in a small town of barely 2,000 inhabitants was not easy, but today it boasts of being the first restaurant in the history of La Rioja to achieve a Michelin star. In November 2012, Francis received, 25 years after his mother, the prestigious National Gastronomy Award for Best Head Chef, and in November 2013, he once again broke the glass ceiling of the Riojan community by achieving the second Michelin star for this restaurant.

Spain, like the rest of the world, has had to live through one of the most turbulent times due to Covid-19. Well, the lockdown led Francis Paniego to do live broadcasts on Instagram to prepare dishes at home with the touch of a two-Michelin-star chef. His videos have had tens of thousands of views.
