What does the Michelin Guide say? In the historic Cigarral del Ángel, on the banks of the Tagus and surrounded by lush gardens, you can savor the unusual proposal of chef Iván Cerdeño, who builds his dishes from memory and seasonality, exalting the best Manchegan products, the characteristic game flavors of the Toledo mountains, the chromatism inherent in working with the prolific local orchards... but also looking at the different cultures that have left their legacy here and, from a distance, at the sea. Pickles, marinades, escabeches, cured meats... his proposal of Manchegan roots and contemporary touches is materialized in four tasting menus (Temporada, Monte y ribera, Toledo olvidado, and Memorias de un cigarral) that usually begin with what they call "atisbos" (glimpses), small traditional bites reinterpreted with modern techniques. Be sure to try the Leche asada al palodú y pólvora de duque, MONTE Y MAR, as it is a revisited dessert that already appeared in the 16th century in Ruperto de Nola's book.
