Traditionally, vegetables and greens have been linked to savory cuisine, standing out for their mild and sweet flavor, among other qualities. For this reason, PãstryRevolution focuses on them to emphasize that they should also be present in sweet proposals. In this edition, vegetables are classified according to the part of the plant consumed, and their most important characteristics when cooking them are reviewed.

Bakery section: In this edition, we have 3 reports on bakeries, with their corresponding formulas; and, in addition, the recipe for the Best Ensaimada in the World 2020.

Panaderías Julia (Alcampell, Huesca) Carlos Sesplugues, along with his wife Julia, has several bakeries in the province of Huesca; being very active on social networks and, therefore, very well known nationally. This is the second time they appear in PãstryRevolution and now they present three new breads: 'Spelt bread with fried corn', 'Durum wheat rimacinata and chia bread' (traditional from southern Italy) and their 'Wine bread with walnuts and raisins'.

Bou (Barcelona) José Bou represents the third generation at the head of this chain of bakeries in Barcelona, which wants to serve 'neighborhood bread' of the highest quality. It also stands out for its pastry. He presents two bread recipes ('Village bread' and 'Multigrain bread') and several pastry recipes.

Fleques PA PA (Figueres, Girona) This traditional Catalan bakery in Figueres (Girona) presents five traditional breads from the area. They are very interesting for their ecological and kilometer-zero characteristics.

Pastisseria Can Pons (Mercadal, Menorca) The famous pastry shop has been awarded the prize for the Best Ensaimada in the World 2020. Exclusively for PãstryRevolution, it presents its recipe and elaboration process.
